Recipe instructions: Place all in a food processor and run on high until it forms a dough. Roll out on parchment paper as thin as possible and microwave until slightly brown in color. Allow to cool before handling.

General Comments : Have some sour cream on hand to dip these into.

Recipe instructions: Heavily butter a large casserole dish and layer the bottom with the Parmesan cheese. Arrange the Cod in the middle and ring it with the shrimp. In a sauce pan pearl the Garlic, Onion, Pepper in the butter. When pearled add in the heavy cream and the spices and bring to almost a boil. Pour the heavy cream mixture over the top of the fish and shrimp, cover with another cup of cheese shreds. Bake at 400 for nearly 60 minutes.

General Comments : You can also add in additional cheese on top when nearly done and place under the broiler to get a crisp cheese crust on top.

Recipe instructions: Season the Chuck Roast on all sides with salt, pepper, a tiny bit of rosemary and thyme, brown in a hot skillet with butter or coconut oil. When brown on all sides place into the slow cooker. Deglaze the skillet with a very small amount of water and scrap into the slow cooker. Cover the meat with the onions, garlic, pepper and do not add any additional liquids. Slow cook until fork tender. When done remove the meat from the cooker and pour off all of the juices into a sauce pan and bring to a boil under high heat. When the bubbles on the surface start to change add in the 1 cup of heavy cream and reduce heat to a simmer. Allow the sauce to thicken. Place the green beans and the chuck roast into the slow cooker and add in the sauce, stir and allow everything to reach temperature again.

Recipe instructions: Combine all of the ingredients except for the pecans and chocolate in a food processor or good mixer. Process on high until a dough forms, then fold in the pecans and chocolate. Form into walnut sized balls, refrigerate if the dough is to sticky. Flatten out and bake at 350 for about 20 minutes

General Comments : For added sweetness you can roll in Splenda or other sweetener then flatten out. The nutritional information does not contain information about the sweeteners used. Double the batch, they are good.

Recipe instructions: Cut up the meats a day ahead of time into 1-2 inch pieces. Place alternating pieces of pork, chicken, beef on a skewer and lay in a shallow pan. Cover them with Worcestershire sauce, a few sprinkles of apple cider vinegar, hot sauce and some heavy cream. Refrigerate over night rotating at least once. When you get ready to grill these gems, coat them down with some garlic infused melted butter, salt and pepper and throw them on a hot grill to brown. Reduce heat until done. Make a lot, they are pretty popular at my house.

Recipe instructions: Lay all of the vegetables in a greased casserole dish and bake at 400 with out a cover. When the cauliflower is fork tender remove the dish from the oven and place all in a food processor or mixer. Add in the butter, cream cheese, sour cream, salt, pepper, cumin, and mix on high. You may need to add a few drops of heavy cream to get things to blend. Once blended spread back out in the casserole dish, cover with the cheese shreds and then top with the bacon bits. Place it under the broiler until the cheese is bubbly.

General Comments : You can also top with green onions when you take it out of the oven. This is a favorite of low carbers and non low carbers alike, be prepared for everyone to eat a lot of this.

Baked at 350 for about 30 minutes.

General Comments : To build a crispy top you can add a layer of Parmesan cheese shreds on top and place under the broiler when ready to serve.

Roll sections out and wrap around 6 hot dogs. Bake at 400 for approximately 10 minutes then reduce heat to 350 for an additional 10 minutes.

General Comments : These come out really good and often thought what wold happen if I deep fried them in coconut oil, haven't tried that yet. The nutritional information does not include the hot dog.

Recipe instructions: Combine the heavy cream, cocoa, sour cream, salt, baking soda, sweetener and whipped till stiff. Set aside and clean and dry bowl well. Whip the egg whites with the cream of tartar till standing peaks. Slowly add spoonfuls of the whipped heavy cream while whipping until all is blended together. It should remain fairly stif. Once it was all combined I spread it out on a parchment lined cookie sheet with a thin layer of pecans. The cookie sheet I used was a large one. Baked at 400 for about 25-30 minutes.

General Comments : The pan I used was 13 x 17, a 10 x 15 would work nicely, you may have to adjust baking times though. They come out like a jelly roll cake, real bendable unless you bake them longer which will make them crispier. Fine line between crispy and burnt though.

Recipe instructions: In a large sauce pan I melted the butter then added the minced peppers and onions. When they were pearled I added the cheese and reduced the heat and stirred until it was all melted. Turned off the heat and added the sour cream using a whisk, then whipped in the eggs. Then added the corn bran, almond flour, salt, a little pepper, whipped until smooth. I like my corn bread a little sweet so I added a 1/4 cup of Splenda (optional) Last thing to add was the baking soda and it will react almost immediately when added. I poured the batter out in a 12 inch heavily greased skillet and baked at 350 for about 40 minutes. I also added some Parmesan cheese shreds on top when the top crusted over.

General Comments : Made this several times now, the size of the pan is critical or you will have to reduce the heat and cook for a longer period of time. The top will start to brown before the center is done if the batter is to thick. The corn bran provides all of the corn taste with out adding any of the carbs. You can make this with out the corn bran if you want a piece of bread as a side dish.

Recipe instructions: Place the whole Almonds in a food processor and grind to a flour. Add all of the remaining ingredients and process until a dough forms. You may have to refrigerate if the dough becomes to loose. Roll into walnut sized balls and flatten out with the palm of your hand as these will not fall much at all. Bake at 400 for about 17-20 minutes on a parchment lined cookie sheet.

General Comments : This is a base recipe for any flavor of cookie you want to make. You can add nuts, walnuts, pecans, dark chocolate, etc. The cookie comes out crisp on the edges and soft in the middle with no cheesy flavor as you would expect.

Stir in the nuts and melted coconut oil and spread out in large parchment lined cookie sheet, mine is 13 x 17 inch, so you may need two cookies sheets. Bake at 350 for approx 20 minutes or until it springs back in the center when pressed with your finger.

General Comments : This recipe can be cut in half, I would suggest using 2 eggs medium eggs instead of 3 jumbo eggs. Goes really well with a cup of coffee for breakfast if your tired of the egg routine.

Baked at 450 until the cheese on top is crusty and brown. Flip over and again top them with the other half of the Parmesan cheese shreds. Place under the broiler until golden brown.

Daikon Pancakes

Ingredient List and Amount used: 1 ¼ cup daikon, (285 grams, prepped, see note) 1 Extra large egg ¼ cup plus 1 TBLS Coconut flour 1 TBLS Thick it Up ¾ cup green onions, chopped (59 grams) 2 tsp onion powder ½ tsp salt

Recipe instructions: Blend egg, green onions, onion powder & salt in a small food processor or blender. Transfer to bowl and add prepped daikon, coconut flour, Thick It Up and mix well. I use a hand mixer, although I am sure it could be done by hand.

Form mixture into walnut size balls, place on tray (I use a large plastic cutting board, but a cookie sheet would work just as well) and freeze until hard, about 3 to 4 hours, then bag and store in freezer.

To fry, heat pan on medium with about 1 TBLS oil (I use bacon fat) and fry for about 4 minutes on each side.

Daikon prep: To get 1 ¼ cups I start with about 2 lbs of daikon, peel and chop into ¼ to ½ inch cubes. Add to boiling water and cook for about 10 minutes or until you can easily pierce with a fork. Then drain them really well and puree them in a food processer. You can mash them by hand, but the food processor gives a much better texture to the final product.

Then line a strainer with cheesecloth and drain for several hours or overnight in the fridge, then discard liquid. You should get around ½ to 1 cup of liquid, depending on old your daikon is. Afterwards you can keep the pureed daikon for several days in the fridge before preparing the pancakes. You can also freeze any leftover puree for the next batch as well.

General Comments : They do take a fair amount of prep work but the recipe makes 24 silver dollar size pancakes and it could easily be doubled or tripled. Since I freeze them prior to frying them you can make enough in one session to last quite awhile.

The most important thing is the consistency before freezing, you want them to be like stiff mashed potatoes. So the amount of coconut flour needed can vary, depending on how old/fresh/well drained your daikon is and I have found that the larger the daikon the less juicy they are. Although I haven’t found that the more mature (larger) ones have any stronger flavor (unlike turnips) than the smaller (younger) ones.

Ingredient List and Amount used: 1 cup of heavy whipping cream, 1/2 cup of coconut oil, Sweetener of your choice, Tablespoon of Vanilla, 8 oz of salted peanut

Recipe instructions: Bring the heavy cream, sweetener, vanilla to a boil and reduce under medium heat to half the volume. Add in the coconut oil and mix well. Mix in the peanuts and immediately pour this onto a shallow pan lined with parchment paper, refrigerate until set.

General Comments : Any size or shape can be made in candy molds.
