Recipe instructions: Melet enough butter to cover the bottom of the skillet your using then add your pumpkin seeds. On medium heat stir until all of the seeds are well coated. Add in your spices and a few drops of worcestershire sauce. Keep frying until all standing liquid is dry and the seeds begin to brown.

General Comments : These were really good. You can also just use seasoning salt in place of all of the others listed. I didn't work out the nutrients as it is hard to tell what a serving size would be for everyone. Pumpkin seeds are pretty low carb items though.

Ultimate Dessert Waffles

1 cup blanched skinless Almonds, processed into flour
1 Jumbo egg
2 Jumbo egg whites
1 tsp baking soda
1/2 tsp baking powder
1/4 cup of melted coconut oil
1/2 cup Splenda (choice)
1/4 cup of Erythritol
pinch of salt
1/3 cup and a couple of tblsp more of ice cold Seltzer water

Recipe instructions: Whip the 2 eggs white until firm, set aside. In a food processor blend the almonds until they are like flour, then add the egg, coconut oil, baking soda/powder, salt. Blend again, it will form a hard dough. Then add 1/3 cup of Seltzer water, blend, then I add a few more tblsp to thin the batter to a pudding like consistency. Combine the batter to the whipped egg white and lightly stir until mixed. These took a little longer to cook, 1.5 minutes per side on a lower heat setting on the waffle iron.

General Comments : Top with your favorite berries

1/3 cup of Erythritol
4 oz of soft cream cheese
1/4 cup of melted coconut oil
2-3/4 cups of Almond Flour
1 tsp Vanilla

1 tsp Baking Powder
Pinch of salt
1/2 tsp Cream of Tartar
1/2 stick of butter
Cinnamon

Recipe instructions: Cream the eggs, cheese and sugar until well blended, then added the remaining ingredients except for the butter. This will form a dough that you can roll out on parchment paper 1/8 - 1/4 inch thick. Then make a mix of 1/2 stick of butter, art sweetener, Cinnamon and spread this evenly on the dough. Roll it up and cut 3/4 inch slices and lay on parchment paper, bake at 350 for 10-15 minutes, brushed the tops with more butter and placed under broiler to brown a tad.

General Comments : If you want to frost the tops whip a 50/50 mix of heavy cream and cream cheese, sweeten to taste. I also add in a few chopped pecans or walnuts to the frosting.

Fresco Flat Bread

10 egg whites or 2 cups of whites only
10 oz of crumbled Fresco cheese
1-1/2 cups of Almond flour or 2 cups of whole blanched almonds ground in a food processor
1 teaspoon of baking soda
1/3 cup of sour cream
dash of salt
1/8 cup of artificial sweetener (optional)

Recipe instructions: In a good Blender grind the whole almonds or add in the almond flour. Add the egg whites and blend till smooth. Next add in the crumbled cheese, sour cream and salt, blend on high for several seconds. I now add in a few slivers of onion and garlic and blend again. Have your pan ready, I use a commercial sized cookie sheet well greased with coconut oil. The final step is to add in the baking soda and blend on high just long enough to get everything mixed. The baking soda will start to react immediately, you need to pour the batter out as soon as you can, spread and place in a 400 degree oven for about 15 minutes. Brown the top under the broiler for the last minute.

General Comments : You can add in any spices while blending. Be sure to let it cool before eating. I keep this in the refrigerator but only after I let it dry on a cookie rack and come to room temperature.

Recipe instructions: In a large well greased skillet place the onions and peppers and simmer until soft.  Add in the cubed zucchini and spread the fresco cheese on top.  This may stick momentarily but it will release when it starts to brown.  Flip several times until the cheese is brown and crispy.

General Comments :  Try not to overcook the zucchini as it will lose its texture

Fresco Fried Chicken

Recipe instructions: Grated the Fresco cheese as finely as possible, I did mine in the food processor, you can do it by hand as well. Beat the egg and the heavy cream together until well blended. I throw all of the chicken into the egg and cream mix and turn it over and over until all the chicken is well coated. You can let this rest in the fridge over night as well. Place it in a ziplock and remove all of the air first. You need about 2 inches of grease in a pan on medium heat to fry these in, the cheese will stick at first but it will come lose, be careful not to splash hot grease all over yourself. I use LouAnn coconut oil to fry in. Drain on a cookie sheet and salt them up again.

General Comments : For the dipping sauce I make my own Honey Mustard. Yellow mustard with worcestershire sauce, hot sauce, apple cider vinegar, and sweeten to taste, its wonderful. I also make a dipping sauce for the more adventurous types. Sour cream and habanero hot sauce.

Ground Chuck Surprise

1-1/2 pounds of ground chuck, any hamburger will do
2 large zucchini cut into medallions
2 large yellow squash cut into medallions
1/4 red onion sliced
1 clove of garlic minced
1/2 cup of Parmesan cheese
1/2 cup of heavy cream

Recipe instructions: In a large skillet brown the hamburger meat slightly then add in all of the veggies and stir. Turn the heat up a notch you want the burger to crisp up a little on the bottom. When the squash is soft add in the heavy cream and stir. Let it simmer until it is clear. Sprinkle the Parmesan cheese on top and place under the broiler until melted and crispy.

General Comments : Don't be afraid to turn the heat up but be sure to keep an eye on it. For the adventurous types add in a few Jalapenos. I served this up covered in Habenaro sauce and topped with sour cream. The nutrition is based on the whole recipe, I have no idea what a serving would be. I ate 3/4's of this last night and finished the rest for lunch. Making more tonight, yea its that good and very easy to make.

Easy Peasy Peanut Butter Fudge

2 cups of dry roasted unsalted peanuts
1/2 cup of Coconut Oil

Recipe instructions: In a food processor or good blender work the peanuts to a flour then add in the sweetener, a dash of salt and the coconut oil. Blend on high. The coconut oil will melt down and the fudge should be pretty thin. Taste it for salt and sweetener content now. Pour out in greased ice cube trays or in a shallow greased pan and refrigerate until hard.

General Comments : These have to stay in the fridge. You can also add in some grated bakers chocolate. Read the labels on your peanuts, they are not created equal when it come to carb content. Spanish Red Skins seem to be the lowest in carbs. The nutrition info is based on general peanuts in the nutritional calculator.

Crab Cakes

1 whole green pepper

3 stalks of celery

4 cans of crab meat drained

Recipe instructions: In a food processor or by hand grate up all of the veggies, add in the crab meat and egg, stir to combine. Spices I used were, paprika, salt, pepper, thyme, basil, red pepper. I then stirred in the 2 cups of grated Fresco cheese combined well. Fry hand made patties in a medium hot well greased skillet.

General Comments : While making the patties either make them over the sink or over a bowl, your going to want to squeeze them and let most of the water drain away before putting them int he frying pan. Do not attempt to flip until the bottoms are browned over. They come out tasting like like the deviled crabs you get in the crab shells, really good.

Due to the variability of this recipe I did not work up the nutrients.

Tortilla Chips

2 cups of cheddar jack cheese shreds
1 cup of Almond Flour
1/4 cup of ground flaxseed
Spices, cumin, red pepper, salt, paprika, garlic powder, onion powder

Recipe instructions: In a food processor combine the ground flax seed, spices and almond flour on high. Then add in the cheese shreds, again process on high. A hard dough will form, drizzle in some water to soften the dough to make it manageable. If you over do the water it will still make chips, no worries here. Roll the dough as thin as you can between two sheets of parchment paper while in a large cookie sheet. If you can remove the top piece of paper do so, if not place everything in the oven at 350 and as soon as you can remove the top paper do so. Let bake until it lifts cleanly from the bottom paper. If you can flip it over at this point it will bake much faster. Keep baking until it is crisp. Allow it to cool before busting up into chips.

General Comments : Alternatively you can microwave these chips as well, I prefer this method. I remove the glass plate from the bottom of the microwave and cut two pieces of parchment paper to fit just over the edge. I roll the dough out between the sheets and then microwave on high until done. You have to stand there and keep a watch on it, very fine line between done and burnt, burnt almond flour is bad, bad.

Basic Cheese Sauce

1/2 stick of butter
1 cup of Sour Cream

Recipe instructions: In a medium sauce pan melt the butter under low to medium heat, once melted add in the cheese. Stir constantly while cheese is melting, once it is all melted remove from heat and slowly stir in the sour cream. The sour cream will break up the cheese into a sauce, the amount will vary but you will know when you have the right amount. Your cheese sauce is complete.

General Comments : If using the cheese sauce for a casserole you can add in an egg. As a dip add in peppers and onions while the butter is melting. I use this basic cheese sauce to make all of my veggie casseroles, broccoli, zucchini, etc. I have done this sauce and baked it with boiled shrimp like it was Mac & Cheese (very good). The cheese sauce will handle 400 degrees. If using for a casserole I found it works best to microwave the veggies before adding them to the casserole dish and then adding in the cheese sauce. Don't forget to add in some salt.

Grilled Fajitas

Ingredient List and Amount used: 1-2 pounds of Skirt Steak, sinew removed (tendon)
1/2 cup of Tequila
1/2 cup of oil (I used MCT)
1/4 cup of Lime Juice
Minced Garlic
Spices: Cumin, red pepper, paprika, salt, pepper
Mild chili peppers
sliced onion
green and red peppers to taste
Shredded Lettuce
Shredded cheese
Sour Cream
Taco Sauce or Salsa

Recipe instructions: Remove the sinew off of the back of the Skirt Steak, its really tough and will ruin your meal. Place this in a ziplock bag. In a container mix the Tequila, garlic, spices, oil, lime juice and pour over the steak. Remove all of the air and close the bag, let this rest in the refrigerator for as long as you like, overnight works the best, remove about an hour before grilling to allow it to come to room temp. Grill the whole steak on a hot grill until seared on both sides well but is still not done int he middle. Remove from the grill and slice across the grain of the meat. Add the meat and the peppers and onions, cook this under the highest heat you can get. Use plenty of oil in the skillet. As soon as the peppers and onions are soft and slightly burnt remove from the heat.

General Comments : Plate this up any way you like, its good no matter how you do it. There are to many variables to determine the nutritional aspects, but it will be on the ketogenic side of things.

Almondoodle Cookies

Ingredient List and Amount used: 1-1/2 cups of blanched whole almonds ground into a flour, approx 1-1/4 cups of almond flour
3/4 cup of Erythritol, need extra to roll cookies in
1/2 cup of coconut oil

1/2 tsp Baking Soda
1 Large Egg
Cinnamon

Recipe instructions: Beat in a mixer or a food processor the egg, coconut oil, erythritol, salt, vanilla, Cream of Tartar, and the baking soda. Add in the almond flour. The dough should come together in a sticky ball. Flatten out against the sides of the bowl and refrigerate until you can form a walnut sized ball in the palm of your hand. Roll the dough in a mix of erythritol and cinnamon. Bake at 400 for 9-10 minutes. Cookies will be really soft when you first take them out but will harden quickly.

General Comments : I use blanched whole almonds and grind them into a flour in a food processor. For some reason it makes the cookie taste better.

Grilled Eggplant & Spinach Casserole

Ingredients:

1 Large Eggplant, peeled and cubed
1 medium size bag of Spinach
1/4 cup of cubed onion, garlic mixed
1 pound of Smoked Sausage
4 cups of cheese shreds (choice)
1 stick of butter
Small amount of pizza sauce

Recipe Instructions:

The trick to making this is the 2 pans, one nested inside the other.  When nested the top cooks, when single the bottom cooks.

With both pans together add all of your ingredients and close the lid until the spinach is wilted, stir then remove the bottom pan.  This will fry the eggplant and sausage.  When done, add in a few squirts of pizza sauce and cover with cheese, place the bottom pan back underneath to keep it from burning.  My grill was nearly 500 degrees at this time.

Grilled Cheesy Peppers

2-3 large squared shape green peppers
2-3 minced Jalapenos
2 cups of mexican cheese shreds
1/2 pound of cooked and crumbled bacon
1/2 cup of mayo
8 oz of cream cheese

Recipe instructions: Soften the cream cheese and blend well with the mayo, add in the jalapenos, bacon bits and then finally the mexican cheese shreds. Should be almost like a cheese ball. Slice the peppers length wise directly through the stem, be sure to pick peppers that will sit flat on both sides. Remove the seeds and white pulp being careful to not cut into the bottom. Pack the cheese mix into the bottom and place on the grill until the cheese has all melted and the peppers are slightly soft, no need to over cook these as you want them to have a little texture, the choice is yours.

General Comments : I have done this with Poblano peppers as well. The trick with them is to pick a flat side down then cut a triangle out of the top just big enough to reach in and remove the seeds. Pack the cheese into the opening then cover it with the removed triangle.

What ever you use make a lot of them they go fast.

Work Out Cake (Chocolate)

Recipe instructions: Cream all of the liquid ingredients and the sweeteners together, beat well. Mix in the remaining ingredients and blend until smooth. Pour the batter out quickly into a well greased 9 x 13 cake pan and bake at 350 f for nearly 30 minutes or until the center pops back when pressed in.

General Comments : Add some walnuts for a special treat.

Recipe instructions: Dissolve the SF jello into the 1/2 cup of boiling water and set aside to cool (important). Whip the sour cream, heavy cream, cream cheese until light and fluffy. When the jello mix is cool with the beaters running drizzle it in and mix whip well. Stir in the strawberries and place the mix into 3oz plastic bathroom cups, insert a plastic spoon in the top. Place in the freezer until set then transfer to a ziplock bag to avoid freezer burning them.

General Comments : Add in some pecan or walnuts for an added treat.

Recipe instructions: Cream the egg, erythritol, then add in the remainder of the ingredients. Slowly pour in the heavy cream until you get a thick batter, beat well with a wire whisk. Cook these as small pancakes no larger than the size of your spatula as they will be extremely delicate. Fry on a medium to medium low heat, erythritol burns easily, you don't want to burn these. Flip when you see the edges starting to dry out and the centers start to bubble.

General Comments : These are very light pancakes, erythritol reacts well with Almond Flour, you will be surprised by these. I have never made them with Truvia or other erythritol blends but it is worth a try.

Fire Roasted Mexican Chicken

Recipe instructions: I did this out on the grill but it can be done in the kitchen on the stove. I fried the chicken in a large skillet until partially cooked then added in the spices, onions and green chilies, stirred for a minute or two. I then covered the top with 2 cups of cheese shreds and placed int he oven or in this case closed the lid on the grill and roasted till all of the cheese was crusted over. I plated this up by cutting into squares topping with lettuce shreds, salsa, diced tomatoes, onion, hot sauce and sour cream.

General Comments : For the more adventurous type add in some Jalapenos to the mix. Carb counts would be difficult on this meal as everyone will have their own variation. It is low though, I eat with total disregard.
