Ingredient List and Amount used: 1 rounded cup of pecan pieces
1/2 cup of pecan pieces
1 rounded cup of crumbled Fresco Mexican cheese
1 large egg white
1 teaspoon of baking soda
1 teaspoon of baking powder
pinch of salt
1/2 cup of Splenda (or sweetener of your choice)
1/2 teaspoon of Nutmeg
1/2 teaspoon of Cinnamon
Few drops of lemon or lime juice

Recipe instructions: In a food processor combine all of the ingredients except the 1/2 cup of pecan pieces. This will form a loose dough that can be handled. Fold in the 1/2 cup of pecan pieces and roll out into walnut sized balls and flatten out. These cookies will not fall on their own. Bake at 350 for 25 minutes.

General Comments : If you do not have a food processor these can be made with 1 cup of pecan mill and then be mixed with an electric beater or mixer.
