Ingredient List and Amount used: 8 jumbo eggs separated
2 cup of Parmesan cheese shreds
1 cup Almond flour
1/2 cup of sour cream
1/2 cup of cocoa powder
1 cup of Splenda or alternative sweetener
1 teaspoon baking soda
1 teaspoon Cream of Tartar
pinch of salt

Recipe instructions: separate the eggs and add the cream of tartar to the egg whites and beat until stiff peaks form, set aside in the refrigerator. In a food processor add in the egg yolks, sour cream, Parmesan cheese shreds, cocoa powder, almond flour, baking soda and a pinch of salt along with the sweetener of your choice. Blend on high until well mixed. The batter will be thick. Transfer the batter to a mixer and whip in half of the egg whites. Once blended hand fold the other half of the egg whites gently. I used a 12 inch round cake pan that was lined with parchment paper and greased the sides. Bake at 350 for 40 minutes until a fork comes out clean in the center.

General Comments : The parmesan cheese does impart any flavor to the cake. This is a rich and moist chocolate cake. I would suggest adding in walnuts and some pieces of bakers chocolate.  The topping pictured is whipped heavy cream with a small amount of sour cream and sweetener.
