Ingredient List and Amount used:
1-1/2 pounds of ground chuck, any hamburger will do
2 large zucchini cut into medallions
2 large yellow squash cut into medallions
1/4 red onion sliced
1 clove of garlic minced
1/2 cup of Parmesan cheese
1/2 cup of heavy cream
Recipe instructions: In a large skillet brown the hamburger meat slightly then add in all of the veggies and stir. Turn the heat up a notch you want the burger to crisp up a little on the bottom. When the squash is soft add in the heavy cream and stir. Let it simmer until it is clear. Sprinkle the Parmesan cheese on top and place under the broiler until melted and crispy.
General Comments : Don't be afraid to turn the heat up but be sure to keep an eye on it. For the adventurous types add in a few Jalapenos. I served this up covered in Habenaro sauce and topped with sour cream. The nutrition is based on the whole recipe, I have no idea what a serving would be. I ate 3/4's of this last night and finished the rest for lunch. Making more tonight, yea its that good and very easy to make.
