Ingredient List and Amount used:

2 cups of dry roasted unsalted peanuts
1/2 cup of Coconut Oil
Artificial Sweetener of choice

Recipe instructions: In a food processor or good blender work the peanuts to a flour then add in the sweetener, a dash of salt and the coconut oil. Blend on high. The coconut oil will melt down and the fudge should be pretty thin. Taste it for salt and sweetener content now. Pour out in greased ice cube trays or in a shallow greased pan and refrigerate until hard.

General Comments : These have to stay in the fridge. You can also add in some grated bakers chocolate. Read the labels on your peanuts, they are not created equal when it come to carb content. Spanish Red Skins seem to be the lowest in carbs. The nutrition info is based on general peanuts in the nutritional calculator.
