Ingredient List and Amount used:

2 cups of cheddar jack cheese shreds
1 cup of Almond Flour
1/4 cup of ground flaxseed
Spices, cumin, red pepper, salt, paprika, garlic powder, onion powder

Recipe instructions: In a food processor combine the ground flax seed, spices and almond flour on high. Then add in the cheese shreds, again process on high. A hard dough will form, drizzle in some water to soften the dough to make it manageable. If you over do the water it will still make chips, no worries here. Roll the dough as thin as you can between two sheets of parchment paper while in a large cookie sheet. If you can remove the top piece of paper do so, if not place everything in the oven at 350 and as soon as you can remove the top paper do so. Let bake until it lifts cleanly from the bottom paper. If you can flip it over at this point it will bake much faster. Keep baking until it is crisp. Allow it to cool before busting up into chips.

General Comments : Alternatively you can microwave these chips as well, I prefer this method. I remove the glass plate from the bottom of the microwave and cut two pieces of parchment paper to fit just over the edge. I roll the dough out between the sheets and then microwave on high until done. You have to stand there and keep a watch on it, very fine line between done and burnt, burnt almond flour is bad, bad.
