Ingredient List and Amount used: 1-1/2 cups of blanched whole almonds ground into a flour, approx 1-1/4 cups of almond flour
3/4 cup of Erythritol, need extra to roll cookies in
1/2 cup of coconut oil
1/2 tsp Vanilla
1/2 tsp salt
1/2 tsp Cream of Tartar
1/2 tsp Baking Soda
1 Large Egg
Cinnamon

Recipe instructions: Beat in a mixer or a food processor the egg, coconut oil, erythritol, salt, vanilla, Cream of Tartar, and the baking soda. Add in the almond flour. The dough should come together in a sticky ball. Flatten out against the sides of the bowl and refrigerate until you can form a walnut sized ball in the palm of your hand. Roll the dough in a mix of erythritol and cinnamon. Bake at 400 for 9-10 minutes. Cookies will be really soft when you first take them out but will harden quickly.

General Comments : I use blanched whole almonds and grind them into a flour in a food processor. For some reason it makes the cookie taste better.
