1 Large Eggplant, peeled and cubed
1 medium size bag of Spinach
1/4 cup of cubed onion, garlic mixed
1 pound of Smoked Sausage
4 cups of cheese shreds (choice)
1 stick of butter
Small amount of pizza sauce
The trick to making this is the 2 pans, one nested inside the other. When nested the top cooks, when single the bottom cooks.
With both pans together add all of your ingredients and close the lid until the spinach is wilted, stir then remove the bottom pan. This will fry the eggplant and sausage. When done, add in a few squirts of pizza sauce and cover with cheese, place the bottom pan back underneath to keep it from burning. My grill was nearly 500 degrees at this time.
