Recipe Name: New England Clam Chowder

Ingredient List and Amount used: 2 10oz fancy whole baby clams 1 8oz jar clam juice 2c chicken stock 2c heavy cream 1c peeled & diced radishes or daikon radish 1 lg stalk celery, diced 8 slices bacon 1 Tbl minced garlic 1Tbl bacon grease 1 tsp xanthan gum 1 tsp salt 1/2 tsp pepper

Recipe instructions: Cut bacon into 1/2 in pieces. brown in a frying pan, add celery and continue til celery is tender. Add all ingredients to crock pot except xanthan gum. Simmer for 2 hours on high. Turn down to low and continue simmering for 1 more hour. Sprinkle xanthan gum in and mix well. Simmer for 30 min.

General Comments : Mozzarella cheese crisps make a great cracker replacement with this chowder.
